Propose a blond beer with characteristic grain flavours and less than 0.5% alcohol. A touch of Corsican lemon juice is added at the end of the ageing process to enhance the flavour, giving it a sparkling freshness on the nose and a pleasant acidity on the palate.
A non-alcoholic beer can be obtained by two techniques: dealcoholisation, which consists of removing the alcohol, or the organic way, which consists of limiting the production of alcohol during fermentation. The Pietra team chose the organic route, which is more natural, with the use of a special yeast.
Traditional yeasts consume the fermentable sugars of the must and transform them into alcohol. "Low alcohol" yeast does not ferment all the sugars in the must, which results in low alcohol production. The use of this type of yeast required several months of testing to master the various parameters of this new production process while maintaining the beer's flavour qualities.
